non-dairy desserts


Most of the desserts I'm used to making require butter. So, it was a challenge the other day to find a dessert to serve some friends who have dairy allergies, and a good opportunity to try something new. After racking my brains (and searching Google :) on what to make, I came across this beauty. The recipe said to serve it chilled, and so I served it with a scoop of lemon sorbet. The result was a fresh and tangy, light dessert, and a roomful of happy eaters :)

Non-dairy Lemon Souffle

1/2 cup superfine (or caster) sugar
2 tbsp flour
1/2 tsp salt
2 eggs, separated
1 cup plain, low-fat soymilk
2 tbsp lemon juice
1 1/2 tbsp grated lemon zest

1. Preheat oven to 350F (or 180 C)
2. Mix flour, sugar, salt.
3. Beat egg yolks with soymilk, add to dry ingredients.
4. Blend in lemon juice and rind.
5. Beat egg whites until stiff.
6. Fold egg whites into lemon mixture.
7. Immediately pour into a greased ramekin or high-sided baking dish.
8. Place in hot water bath and bake 45 min. (Note: If you are dividing mixture into small ramekins, bake time is much shorter. Check souffles around 25-30min.)
9. Serve chilled.
