Cheesecakes have always daunted me. Something about how perfect they look makes them appear like they'd be tricky to get the hang of. This one, however, requires so little effort I'm not sure it qualifies as a cheesecake at all. A shortbread crust (made from crumbed store-bought shortbread), a tub of cream cheese, dollop of sour cream, a few tablespoons of icing sugar, zest of one lemon, and some fresh berries on top, is all it takes to wow your mates.

The quick & easy "up-do" of cheesecakes
Cheesecakes have always daunted me. Something about how perfect they look makes them appear like they'd be tricky to get the hang of. This one, however, requires so little effort I'm not sure it qualifies as a cheesecake at all. A shortbread crust (made from crumbed store-bought shortbread), a tub of cream cheese, dollop of sour cream, a few tablespoons of icing sugar, zest of one lemon, and some fresh berries on top, is all it takes to wow your mates.

I've had a couple people ask me for the recipe, so here it is:
1 cup finely ground shortbread cookie crumbs
3 Tbsp sugar
3 Tbsp melted butter
1 Tbsp egg white, lightly beaten
8 oz chilled mascarpone cheese, or cream cheese
1/4 cup sour cream
3 Tbsp confectioners (icing) sugar
zest of one lemon
1 pint fresh berries
1. Preheat oven to 375 F (190 C). Combine crumbs, sugar, butter, and egg white. Stir thoroughly with a fork. Press into a tin, forming strong edges. Bake 8-10 min until lightly browned. Cool. When almost cool, remove tin.
2. Meanwhile, combine cream cheese, sour cream, conf. sugar, and lemon zest. Chill til needed.
3. Wash berries. Chill til needed.
4. Transfer crust to plate. Fill with cream cheese filling. Top with fresh berries. Dust with conf. sugar :)
